Dubai chocolate, who? Pandan cakes are Hong Kong’s latest dessert obsession. With their eye-catching colour and luscious creaminess, these cakes deliver a taste of the tropics straight to our urban jungle. Vanilla’s more exotic cousin, the flavour beloved in Singapore and made famous by Bengawan Solo (and the 852’s very own Pandan Man), pandan everything is enjoying its moment in the sweet treat limelight — begging for an Instagram moment at that!

During the pandemic when it was impossible to satisfy cravings for Singapore’s famed pandan cake, the Pandan Man founders took matters into their own hands and perfected their recipe, making the much-loved dessert available in the 852. Having established themselves as Hong Kong’s pandan pros, they’ve branched out with innovative fusion confections, like the pillowy soft Pandan & Coconut Mochi, made from 100% natural ingredients —fresh pandan leaf extract, coconut milk and a palm sugar-coated coconut filling (the dark green comes from a hefty amount of fresh pandan leaves).

Sassy Tip: Keep pandan mochi at room temperature, and best when consumed on the day of purchase (as if you’d be able to wait longer!)

Lady M  — Celebrated NYC patisserie perfects infusing pandan in refined creations

This celebrated patisserie hailing from New York City has taken off in Hong Kong for its exquisite handmade cakes that are delicate and not too sweet — seemingly the winning formula for 852 desserts. It has nailed it yet again with the Pandan Mango Shortcake, featuring a layer of pandan custard made from freshly extracted pandan juice, mango pieces and a thick layer of homemade coconut pudding, nestled between soft pandan sponge layers to create a perfect harmony of textures. Coated with its signature hand-whipped mascarpone cream infused with coconut cream and a splash of Malibu, it’s a pandan-infused taste of paradise.

Orchid Padaria Bakery — Modern take on traditional baked goods

A local favourite for more than 20 years, this Hong Kong-style bakery gives traditional pastries a contemporary twist while preserving culinary heritage. It became famous for its signature star-shaped mille-feuille tarts encasing French custard, created by a former Mandarin Oriental pastry chef. Today’s hot ticket items are everything pandan. Oookie Cookie — Homegrown brand specialising in customised cakes

Otera — Umami desserts designed to instil a sense of harmony

Meaning ‘temple’ in Japanese, Otera pastries and desserts are created to bring about a sense of harmony. With a focus on umani, where sweet meets savoury and sugar is used sparingly, you won’t find sickly sweet confections here. The Salted Pandan and Lemongrass Flan Cake encompasses homemade aged pandan leaf extract, lemongrass and sea salt, the salted pandan mousse boasting a melt-in-your-mouth texture.

Established in Thailand more than 80 years ago, ChaTraMue is synonymous with the Thai tea we associate with sweet, condensed milk goodness. Sweet Secrets — Best pandan cake for those with dietary requirements

One of the first Hong Kong bakeries catering to food intolerances, more than 70% of the Sweet Secrets menu is made without eggs, refined sugar, dairy and nuts so that diabetics and those on paleo, vegan and keto diets can still have their cake and eat it. Created in memory of the founder’s mother, the Signature Nostalgia Cake also happens to be diabetic-friendly, gluten free and low in carbs (made from 100% almond flour) and sugar.
